Ingredients:
For the pie crust:
- 2 ½ cups all-purpose flour

- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 6 to 8 tablespoons ice-cold water
For the apple filling:
- 6 to 7 medium-sized apples (a mix of sweet and tart varieties like Granny Smith and Honeycrisp), peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, cut into small pieces
For the egg wash (optional):
- 1 large egg
- 1 tablespoon milk or water

For the pie crust:
- In a large bowl, mix the flour, salt, and granulated sugar together.
- Add the cold cubed butter to the flour mixture. Use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Slowly add the ice-cold water, one tablespoon at a time, mixing with a fork or your hands until the dough comes together. Be careful not to overwork the dough.
- Divide the dough into two equal portions, shape them into disks, and wrap each disk in plastic wrap. Refrigerate the dough for at least 1 hour or up to 24 hours before rolling.
For the apple filling:
- In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss the apple mixture until the apples are evenly coated with the sugar and spices.
Assembling and baking the apple pie:
- Preheat your oven to 375°F (190°C).
- Take one of the chilled pie dough disks out of the refrigerator and let it sit at room temperature for about 5 minutes to make rolling easier.
- On a floured surface, roll out the dough into a circle large enough to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish and gently press it into the bottom and sides.
- Trim any excess dough hanging over the edges of the pie dish.
